Ramen

Fresh pork and chicken bones are boiled in a large pot at the highest heat for 20 hours to extract the maximum flavor and umami from the meat. We make our ramen from slow-cooked Berkshire pork bellies, shoyu-marinated soft eggs, sweet yellow corn, fresh mung bean sprouts, wakame, narutomaki fish cake, and scallions. From that delicious base, we make three varieties from which to choose: shoyu (soy sauce), pork, and miso (soy bean).
